Gulab Khaas mangoes, renowned for their rosy aroma and vibrant pinkish-red skin, are perfect for creating delectable desserts. One delightful way to showcase their unique flavor is by preparing Mango Kulfi, a traditional Indian frozen treat. Here's a simple recipe tailored for Gulab Khaas mangoes:

 

Ingredients:

 

- 2 ripe Gulab Khaas mangoes (approximately 500 grams)

- 1 liter full-fat milk

- 100 grams sugar (adjust according to mango sweetness)

- 1/2 teaspoon cardamom powder

- 2 tablespoons chopped pistachios (optional, for garnish)

 

Instructions:

 

1. Prepare the Mango Puree:

   - Peel and chop the Gulab Khaas mangoes into small pieces.

   - Blend the mango pieces into a smooth puree and set aside.

 

2. Reduce the Milk:

   - In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat.

   - Lower the heat and let it simmer, stirring occasionally to prevent scorching, until the milk reduces to about half its original volume. This process may take approximately 20-25 minutes.

 

3. Sweeten and Flavor:

   - Add the sugar to the reduced milk, stirring until fully dissolved.

   - Mix in the cardamom powder for added flavor.

 

4. Combine with Mango Puree:

   - Remove the milk mixture from heat and allow it to cool to room temperature.

   - Once cooled, blend in the Gulab Khaas mango puree until the mixture is smooth and well combined.

 

5. Set the Kulfi:

   - Pour the mango-milk mixture into kulfi molds or small cups.

   - Cover the molds with lids or aluminum foil, inserting wooden sticks if desired.

   - Freeze the molds for at least 6-8 hours, or until the kulfi is completely set.

 

6. Serve:

   - To unmold, briefly dip the molds in warm water or rub them between your palms to loosen the kulfi.

   - Garnish with chopped pistachios if desired, and serve immediately.
