Ingredients:

  • 4-5 medium-sized potatoes, peeled and cubed

  • 2 tablespoons mustard seeds
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Sugar to taste
  • Water as needed
  • Fresh coriander leaves for garnishing (optional)

Instructions:

  1. Heat mustard oil in a pan or kadai over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add the green chilies and sauté for a minute until they release their aroma.
  4. Add the cubed potatoes and mixed vegetables to the pan. Mix well with the spices and oil.
  5. Add turmeric powder, salt, and sugar. Mix everything together, ensuring the vegetables are coated with the spices.
  6. Reduce the heat to low and cover the pan. Allow the vegetables to cook for about 10-12 minutes, stirring occasionally.
  7. Check the tenderness of the vegetables. If needed, cook for a few more minutes until they are cooked through.
  8. Meanwhile, grind the mustard seeds with a little water to make a smooth paste.
  9. Once the vegetables are cooked, add the mustard paste to the pan. Mix well.
  10. Add water, about 1/2 cup or as needed, to create a thick sauce consistency. Mix well.
  11. Cover the pan and let it simmer on low heat for another 5-7 minutes, allowing the flavors to meld together.
  12. Remove from heat.
  13. Garnish with freshly chopped coriander leaves, if desired.
  14. Serve Shorshe Batar Chorchori hot with steamed rice.
