  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Sugar to taste
  • Water as needed
  • Fresh coriander leaves for garnishing (optional)

Instructions:

  1. Heat mustard oil in a pan or kadai over medium heat.
  2. Add cumin seeds, dried red chilies, and bay leaf. Let them splutter for a few seconds.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Add ginger paste and garlic paste. Sauté for a minute until the raw smell disappears.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  7. Add the cauliflower florets to the pan. Mix everything together, ensuring the florets are coated with the spices.
  8. Reduce the heat to low and cover the pan. Allow the cauliflower to cook for about 10-12 minutes, stirring occasionally.
  9. Check the tenderness of the cauliflower. If needed, cook for a few more minutes until it is cooked through but still retains its texture.
  10. Once the cauliflower is cooked, add sugar to balance the flavors. Adjust the seasoning if required.
  11. Add water, about 1/2 cup or as needed, to create a gravy consistency. Mix well.
  12. Cover the pan and let it simmer on low heat for another 5-7 minutes, allowing the flavors to meld together.
  13. Remove from heat.
  14. Garnish with freshly chopped coriander leaves, if desired.
  15. Serve Phulkopir Dalna hot with steamed rice or roti.
