Blossoming Flavors: Unveiling the Exquisite Mochar Ghonto Recipe

Mochar Ghonto is a delicious Bengali dish made with banana blossoms (mocha). It is a flavorful and nutritious dish cooked with spices, grated coconut, and sometimes with potatoes. Here's a recipe to make Mochar Ghonto:

Ingredients:

  • 1 banana blossom (mocha)
  • 1 potato, peeled and cubed (optional)
  • 2 tablespoons mustard oil
  • 1 teaspoon cumin seeds
  • 2-3 dried red chilies
  • 1 bay leaf
  • 1 onion, finely chopped
  • 2 teaspoons ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Sugar to taste
  • Grated coconut (about 1/2 cup)
  • Fresh coriander leaves for garnishing (optional)

Instructions:

  1. Remove the outer purple leaves of the banana blossom until you reach the tender light-colored inner layers. Cut off and discard the top portion of the blossom. Remove the florets and discard the tough pistil or stamen in the center. Chop the florets finely and soak them in water with a pinch of salt to prevent discoloration. Drain and set aside.
  2. Heat mustard oil in a pan or kadai over medium heat.
  3. Add cumin seeds, dried red chilies, and bay leaf. Let them splutter for a few seconds.
  4. Add the chopped onions and sauté until they turn golden brown.
  5. Add the ginger paste and garlic paste. Sauté for a minute until the raw smell disappears.
  6. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  7. Add the chopped banana blossom florets and cubed potatoes (if using) to the pan. Mix everything together, ensuring they are well coated with the spices.
  8. Reduce the heat to low and cover the pan. Allow the vegetables to cook for about 10-12 minutes, stirring occasionally.
  9. Check the tenderness of the vegetables. If needed, cook for a few more minutes until they are cooked through.
  10. Once the vegetables are cooked, add grated coconut and mix well.
  11. Add sugar to balance the flavors. Adjust the seasoning if required.
  12. Cover the pan and let it simmer on low heat for another 5 minutes to allow the flavors to meld together.
  13. Remove from heat.
  14. Garnish with freshly chopped coriander leaves, if desired.
  15. Serve Mochar Ghonto hot with steamed rice or roti.
