Ingredients:

  • 1 teaspoon Kolkata Puchka Masala
  • Salt to taste

For the Tamarind Water:

  • 1/4 cup tamarind pulp
  • 2 cups water
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • 1/2 teaspoon black salt
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 tablespoon jaggery or sugar (adjust to taste)

Instructions:

  1. In a mixing bowl, combine the mashed potatoes, boiled chickpeas, chopped onions, coriander leaves, roasted cumin powder, chaat masala, and salt. Mix well until all the ingredients are combined.

  2. In another bowl, prepare the tamarind water. Soak the tamarind pulp in water for about 15 minutes. Then, strain the pulp to extract the tamarind water. Add roasted cumin powder, chaat masala, black salt, red chili powder, and jaggery or sugar to the tamarind water. Mix well until the flavors are well combined.

  3. Take a ready-made puri and gently crack open the top to create a small opening.

  4. Fill the puri with a spoonful of the prepared filling mixture. Add more or less filling according to your preference.

  5. Pour the tamarind water into the puri, filling it to the brim. Be generous with the tamarind water to create a flavorful and tangy experience.

  6. Repeat the process for the remaining puris, filling them with the potato mixture and tamarind water.

  7. Serve the puchkas immediately, allowing your guests to enjoy the burst of flavors.
