Recipe for Gokul Pithe:

*Ingredients:
- 1 cup rice flour
- 1/2 cup grated coconut
- 1/2 cup khoya (milk solids)
- 1/4 cup grated jaggery
- A pinch of cardamom powder
- Ghee for frying
- A little warm water
- A handful of finely chopped nuts (cashews, almonds, and pistachios)

For the Sugar Syrup:
- 1/2 cup sugar
- 1/4 cup water

Instructions:

1. Prepare the Sugar Syrup:
- In a saucepan, combine sugar and water.
- Boil until you get a sticky syrup consistency (about 2-3 minutes after it starts boiling).
- Keep it warm.

2. Make the Dough:
- In a mixing bowl, combine rice flour, grated coconut, khoya, grated jaggery, and cardamom powder.
- Gradually add a little warm water and knead to make a smooth, pliable dough.
- Divide the dough into small portions and roll them into balls.

3. Shape the Pithe:
- Flatten each dough ball into a small disc, place a pinch of chopped nuts in the center, and fold the dough over to form a semi-circular shape.
- Press the edges to seal and create a half-moon shape with the nut filling inside.

4. Fry the Pithe:
- Heat ghee in a pan over medium heat.
- Fry the prepared pithe until they turn golden brown and crisp on both sides.
- Remove them from the pan and place them on paper towels to remove excess ghee.

5. Soak in Sugar Syrup:
- While the pithe are still warm, dip them into the warm sugar syrup.
- Let them soak for a few minutes to absorb the sweetness.

6. Serve and Enjoy:
- Your Gokul Pithe is ready to be served! Garnish with some more chopped nuts if desired.
