Ingredients:

 

For the Nolen Gur Syrup:

- 1 cup Nolen Gur (Date Palm Jaggery), grated

- 2 tablespoons water

- 1/2 teaspoon cardamom powder

 

For the Ice Cream Base:

- 2 cups heavy cream

- 1 cup whole milk

- 1/2 cup granulated sugar

- 4 large egg yolks

- 1 teaspoon vanilla extract

 

Instructions:

 

  1. Prepare the Nolen Gur Syrup:

 

  1. In a small saucepan, combine the grated Nolen Gur and water over medium heat. Stir constantly until the Nolen Gur completely dissolves and forms a thick syrup. This should take about 5-7 minutes.

 

  1. Add the cardamom powder to the syrup and mix well. Remove from heat and let it cool to room temperature.

 

  1. Prepare the Ice Cream Base:

 

  1. In a medium-sized mixing bowl, whisk the egg yolks and sugar together until the mixture becomes pale and slightly thick.

 

  1. In a separate saucepan, heat the milk over medium heat until it starts to steam, but do not let it boil. Remove from heat.

 

  1. Slowly pour the warm milk into the egg yolk and sugar mixture, whisking constantly to combine.

 

  1. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes. Do not let it boil.

 

  1. Once the mixture has thickened, remove it from the heat and let it cool to room temperature.

  1. Cover the mixing bowl with plastic wrap and refrigerate the mixture for at least 4 hours, or preferably overnight. This allows the flavors to meld and the mixture to become very cold.

  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

 

  1. Freeze the Ice Cream:

 

  1. Transfer the churned ice cream into an airtight container and freeze it for at least 4 hours or until it firms up.
